Carnet de Recettes #17 - Les Meringues

Chers lecteurs,


Aujourd'hui, une recette dont l'origine est controversé puisque plusieurs pays se la disputent  : la meringue. Qu'elle soit française, suisse ou italienne, les ingrédients de base sont les mêmes, seule la préparation change ce qui a obligatoirement une incidence sur le résultat final. Il n'existe donc pas un mais trois types de meringue. Ici, il sera question de la meringue française, croustillante à l'extérieur et fondante à l'intérieur. Que du bonheur!
Certains considèrent cette recette comme un challenge culinaire. L'appareil est on ne peut plus simple à réaliser mais le temps et la température de cuisson varient en fonction du four utilisé, et représentent la réelle difficulté! Quelques essais peuvent être nécessaires pour trouver la cuisson parfaite.

Pour une vingtaine de meringues, vous aurez besoin de:

- 4 blancs d'oeufs frais; -200 g. de sucre; - 1 pincée de sel

Montez vos blancs en neige ferme avec le sel, ajoutez ensuite votre sucre petit-à-petit en continuant de battre vos blancs ( si vous utilisez un fouet électrique, utilisez la vitesse la plus faible pour la deuxième étape et finissez d'incorporez le sucre à l'aide d'une spatule). Le mélange doit être ferme et avoir un aspect lisse et brillant. 

L'astuce du chef pour vous assurez que votre mélange ai la bonne consistance : plongez une cuillère dans la préparation, lorsque vous la retirez, le blanc qui reste dessus doit former un bec d'aigle crochu.

Formez ensuite vos meringues sur une plaque de cuisson chemisée de papier sulfurisé. Vous pouvez les faire avec une poche à douille si vous voulez des formes bien régulières ou plus simplement avec une cuillère à soupe pour des meringues plus nature.


Faites pré-chauffer votre four pour la cuisson (d'après mes expériences et des différents fours que j'ai connu) :

Au four à gaz : 100° c, environ 1 heure
Au four à chaleur tournante : 100°c, un peu plus d'1 heure
Au four électrique : 90°c, environ 1h30- 2h 
Diminuez le temps de cuisson de moitié si vous réalisez des bâtonnets de meringue (doigts de fée).

Laissez refroidir avant de manger, elles seront fondantes à l'intérieur le jour de la cuisson. Si vous êtes un puriste, à la fin de la cuisson laissez les meringues sécher dans le four éteint et entrouvert au minium pendant 7h.

Some consider this recipe as a culinary challenge but the difficulty lays in the cooking. The dough could not be easier to do but the cooking time and temperature differ depending on the type of the oven so some tests might be needed to find the perfect cooking.

For twenty meringues, you will need:

- 4 fresh egg whites, 200 g. sugar - 1 pinch of salt

Whisk your egg whites in a bowl with the salt, then add your sugar gradually while whisking your white (when using an electric whisk, use the lowest speed for the second stage and finish to stir in the sugar using a spatula). The mixture should be firm and have a smooth and shiny appearance.

The chef's tip to make sure that you reached the right consistency: dip a spoon in the preparation, when you remove it, the white should  look like an eagle's hooked beak.

Then form your meringues on a baking sheet lined with parchment paper. You can do it with a pastry bag if you want very regular shapes or simply with a tablespoon for more natural style meringue.

For cooking (from my experience and I the different oven I worked with) pre-heat the oven
Gas oven: 100 ° C, about 1 hour of cooking
Convection oven at 100 ° C, a little over 1 hour of cooking
Electric oven: 90 ° C, about 1h30-2h
Reduce the cooking time by half if you are making meringue sticks.

Let them cool before eating, it will be tender in the inside if eaten the day of cooking. If you are a purist, at the end of cooking leave the meringues in the turned off oven for minium 7 hours.
